this area.
The "Butteri" are the original
cow-boys, sorry America!

The Maremma is one of five rare breeds from
the centre of Italy.
Its meat is obtained from both the male and
female, the animals being registered by the
Italian Breed Society or coming from first
generation crosses between registered Maremma
cows and bulls belonging to specialised meat
breeds (Chianina, Marchigiana, Romagnola,
Charolaise and Limousine).
The calves live in the field while still with
their mothers and are then either kept in
stables or are allowed to graze freely in
the fields until slaughter.They are also fed
forage and guaranteed quality animal feed.
The animals are slaughtered when they reach
11 - 24 months.

Maremma Veal Festival ("Sagra della
Carne Maremmana") in Monteromano,
every year in the third week of August. Stands
and various events, all with one basic theme:
maremma veal.
Mostra del Cavallo Maremmano (every two
years in Canino): the local cow-boys
are given a chance to show off their rodeo
skills.
Fiera della Merca in Monte Romano
and Tarquinia, late Spring: country
shows with plenty of horses, rodeos and BBQs.
