A much sought-after delicacy
Also known as the scorzone locally, these
truffles grow in woods throughout the area
(Tarquinia - Tolfa mountains) and live in
symbiosis with the trees (pines, poplars,
oaks and hazels).
Curiosity: the root system emits
a poisonous substance for other plants,
making the truffles relatively easy to find.
Like all truffles, black truffles (Tuber
Aestivum Vittad.) grow just below the soil,
meaning dogs (in the past, pigs) are often
trained to find them.

Growing in moist, well
drained places, truffles are generally collected
in August and September. Those gathered
in May and June lose out in taste. Not as
strong as white truffles, hence their relatively
affordable price. Grate truffles onto parmesan
cheese or into olive oil. Excellent with
meats, pasta, potatoes or in sauces.
